THE PRE-EMINENT INTERNATIONAL EVENT ON CHINESE CUISINE & WINE
AN EVEN MORE AMBITIOUS CONGRESS IN 2009!
Following the success of last year’s inaugural ICCCW – International Congress of Chinese Cuisine & Wine 2008 in Beijing – this year’s ICCCW, 19 to 21 October 2009, Singapore, will be an even more ambitious congress.
The first change will be that instead of holding the four Food Tasting/Panel Discussions in a fixed venue (with the food supplied by the banquet department of a hotel), we have identified three of Singapore’s top Chinese restaurants as the venues for the Food Tasting/Panel Discussions.

This means the four Food Tasting/Panel Discussions will be held in the restaurants themselves.
LUNCHES & DINNERS CONTINUE AT RESTAURANTS
At the same time, following the Food Tasting/Panel Discussions, lunch and dinner will continue to be served in the respective restaurants.
There will be different dishes and participants will continue to be able to pair and experiment different wines with those dishes.
TASTE, PAIR, EXPERIMENT & DISCOVER!
The goals of the International Congress of Chinese Cuisine & Wine are for participants to taste, pair, experiment and discover what wines best match different Chinese dishes – in the case of 2009, Teochew, Sichuan and Cantonese cuisines.
In doing so, participants are, in effect, exploring what wines – their characteristics – work best with those dishes.
In discovering the ideal wines with those dishes, participants will also find out what other wines are unsuitable with those dishes.
It would, after all, be unrealistic to imagine that every wine can pair with every dish.
OFFICIAL ICCCW PAIRING GUIDE
As with ICCCW 2008, the International Congress of Chinese Cuisine & Wine 2009 will continue to collate from participants their views and, from them, add on to and update the “Official ICCCW Pairing Guide” which had already begun followng the inaugural ICCCW 2008.
This “Official ICCCW Pairing Guide” (in English & Chinese) will be disseminated to all major hotels and hotel chains; restaurants and restaurant chains; wine distributors and importers; wine retailers; wine educators; sommeliers; and, the press and media throughout China, Hong Kong, Taiwan, Japan, Korea, Singapore, Malaysia, Indonesia, Vietnam and Thailand. It will also be posted on www.icccw.com.

WHO WILL ATTEND ICCCW 2009
Conducted in English (although some of the panelists also speak Chinese), ICCCW 2009 will be attracting delegates and participants from China, Hong Kong, Taiwan, Japan, Korea, Vietnam, Thailand, Indonesia, India, Malaysia, Singapore, and beyond. There will be sommeliers, wine educators, restaurateurs, food & beverage professionals, hoteliers, wine distributors and importers, wine retailers and the press and media. GRAND PUBLIC BUFFET ON 21 OCTOBER 2009
This is a new initiative and will be open to the public on Wednesday 21 October 2009. It will allow the public to taste wines and food items that have been experienced by the professional participants. Award-winning author Fuchsia Dunlop will also be autographing copies of her books.
